We are off just after teaching class this morning to the midwest to visit our families. Traveling across country always brings me new perspective and an opportunity to quiet my mind and see my life through a clearer lens.
We are stopping at a few important places along the way that continue to inspire us as we get closer to building our small retreat center. Yesterday, we took a roadtrip out to our land in Vernonia to look at a couple of old farmhouses and to hear the quiet on Rock Creek. There is an excitement building around where we will be next year at this time. Stay tuned, as I feel the momentum picking up -- so much at times that I can hardly sleep.
I am not the same having seen the moon on the other side of the world.
Here is an absolutely scrumptious, non-dairy, healthy dessert recipe from my friend Andrea.
Super Simple No-Measure CASHEW CREAM PARFAIT:
Mix cashews, water (or coconut milk), a little vanilla & a little agave (or maple syrup) in a blender or food processor. Mix well. Depending on your desired thickness, add more or less water. I layered it with raw buckwheat & berries of your choice...yummy!
Off to be part of the Britt & Larry Traveling Circus.
See you in class on the 22nd of August.
